Crock-Pot Cheesy Rotel Dip with Meat

Rotel dip is an easy to make dip for any occasion especially parties and your occasional get together. With a couple of quick ingredients and about an hour of cook time you will have assembled a great party favorite. This recipe will give you enough for about 4-8 people, if for a large group of people then just double the recipe and you will surely have enough to satisfy everyone.
Ingredients needed to make Rotel
- 2 pounds of Kraft Velveeta Cheese
- 1 pound of ground lean (80/20) ground beef
- 10 oz can of tomatoes with green chilies or you can use your own favorite salsa
- 1/4 cup of chopped onions
- Optional ingredients Added: Shrimp
How to make Rotel
To prepare first you want to take 1 1/2 pounds of the kraft Velveeta cheese and dump it into the Crock-Pot. If you don't mind it being a little cheesier then add in the whole 2 pounds, it will not affect anything. Then dump the can of tomatoes on top and turn the crock-pot on high letting that melt.
Next you want to take you ground beef and cook until it starts to brown then dump in your finely chopped onions. Make sure that you give the onions a little time to cook in so that it can get some of the flavor going inside of the meat. As a side note if you would like to season or flavor your meat with your favorite seasoning go right ahead. After cooking the meat you must drain all the excess fat from the meat so that you do not water down the dip.
Then take the meat and place inside the crock pot after the cheese has completely melted. Stir the meat into the cheese and let sit on medium or low for another 30 minutes. After the cheese and meat are cooked in, place on warm to keep the cheese from sticking and server right from the crock-pot.
